Chipotle roasted sweetcorn with squash, black beans, feta & lime

Works well with corn on the cob, or frozen sweetcorn

  1. Preheat oven to 180C fan
  2. Mix squash, sweetcorn and beans with the spices, salt & oil
  3. Roast for 45 min
  4. Top with lime juice, feta and coriander, serve with rice & sour cream.
