- 750g squash, in 1cm slices
 - 4 cobs of sweetcorn
 - 1 tin of black beans
 - 1 tsp chipotle chilli flakes
 - 1 tsp coriander
 - 1 tsp cumin
 - 1 tsp salt
 - 2 tbsp olive oil
 - 1 lime (juice only)
 - 200g feta
 - fresh coriander
 
- Preheat oven to 180C fan
 - Mix squash, sweetcorn and beans with the spices, salt & oil
 - Roast for 45 min
 - Top with lime juice, feta and coriander, serve with rice & sour cream.
