- 1kg sweet potatoes 1cm slices
- 1 onion
- 2 cloves garlic
- 2cm ginger
- 1 chilli
- 50g peanut butter

- Preheat oven 180 fan
- Mix sweet potatoes, onion, garlic chill in roasting tin with oil and sea salt. Roast for 45 min
- Add chopped toms, peanut butter and stock back into oven for 15 min
- Serve with rice, coriander and peanuts
