Date & walnut loaf

James used to bake this for taking on walks.

  1. Pour boiling water over dates, sugar, walnuts, banana and butter.
  2. Add bicarb. Stir and let cool.
  3. Mix in the flour.
  4. Put in 1lb loaf tin and sprinkle with demarara sugar.
  5. Cook for 30-40 min at 180°C.
