- 1 tin kidney beans
- 1 tin black eyed beans
- 1 large carrot
- 1 stick celery
- 1 onion
- 1 clove
- 1 red chilli
- 1 tbsp tomato puree
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 bay leaf
- 1 cinnamon stick
- 1 tsp smoked paprika
- 1 tsp soy sauce
- 1 tin of tomatoes
- 1 pepper (frozen?)
- Fresh coriander
- Fry carrot, celery, onion, garlic, chilli in oil.
- Add tomato puree, cumin, coriander, bay, cinnamon, paprika.
- Add chopped toms, peppr and soy. Simmer and cook on low for 20 min.
- Add beans, simmer, cook for 15 min.
Serve with rice, guac, sour cream, cheese and tortilla chips.
